I believe you are talking a bout focaccia flat bread. I will try to explain my recipe, but I do my dough by feel.
1 1/4 cup of warm water ( between 100 and 110 f)
a little sugar. My guess is about 1 teaspoon
1 tablespoon of dried yeast, I use the bulk yeast, but if I was using the small package, I would try 1 package. 1 cup of flour. Mix the above together and place a towel over the bowl. Let it rest for 1/2 hours, no less than 15 minutes, this is important in making focaccia flat bread, it allows the bread to be more airy. Now add about 2 more cups more or less to the dough a little at a time. About 1/4 cup for beginners until you get the feel of the dough. As the dough start to form into dough and the dough is still moist, add 2 tablespoons of olive oil, don't add more, or the dough won't turn out. Add more flour until you can work the dough by hand. At this time, add 1 teaspoon of salt, you might like more, I don't. The dough will start to get moist again, and you may need to add a little more flour, remember you do not want a dry dough, but feels a little sticky, but workable. Now let the dough rest 5 or 10 minutes, than knead the dough until smooth on a lightly floured surface. Let double in size. It won't take long. A little over 1/2 hours no longer than 1 hour. Now pat out the dough to about 3/4 inch thick, If using a cookie sheet with a ridge, put the dough on the back of the cookie sheet, for you aren't baking cookies. Add a little olive oil over the top of the surface of the bread. A light sprinkle of coarse salt. I love garlic, so I slice fresh garlic cloves and push it into the dough. I also love Calamari olives and will cut them in half and put on the bread dough. Sprinkle a little grated cheese and let the dough raise, after I put my thumb prints all over the bread to put in the dimples that focaccia bread in noticed for. After dough raises for about 1/2 hours, I will pop it into a 375 F oven and bake for about 25 minutes and tap the bottom of the loaf, if it sounds hollow, the bread is done.
