To evenly coat steaks with salt, pepper, or other seasonings, here's what I do.

Sprinkle the seasonings onto a plate, then lay the steak on the plate. The seasonings will stick to the meat due to the steak juices. I heavily apply the seasonings to the plate, because I like a lot of pepper, preferably freshly ground black pepper. You can also do this with the oil as described in the message I'm replying to. After the steak has been liberally coated, remove it from the plate, sprinkle seasonings on the plate again, and do the same with the other side of the steak. If you want the seasonings to really get into the meat, let each side rest on the plate for a while.

I like garlic on my steak, and I'm not big on pepper, so here's what I do.
First get the steak to refrigerator temperature if it was frozen. Next take
a bottle of olive oil and pour a bit on the top of the steak. Using clean
fingers rub it all over the steak until the steak is coated with it. Place
the steak on a plate and shake your seasoning on it -- I use garlic salt
alone, or if I want a bit more exotic flavor I use Cavender's Greek
Seasoning. Then return the steak to the fridge for at least an hour to let
the "dressing" set.
This is what steak aficionados call dressing a steak, and they turn out nice
this way. I've used this for the grill, the oven, the stovetop, and the
George too, so it's a good general dressing method for beef. You'll be
amazed at the difference in flavor the oil makes on the steak -- it's the
big factor why steakhouse steaks taste so much better.

good morning, or night, depending if you're geting up for the day or
just going to bed now.  I want to make steak and potatos and was
wondering what some people put on their steak?  I know in the
restaurants it tastes just like a little ground pepper and some salt.
Does anyone know.  I know you can do a steak sauce but was wondering if
you didn't have steak sauce would a little salt and pepper taste good
with it or not?  I also know, up here in western Canada, when it rains
some people cook the steak in the oven if they were going to barbecue
it.  Thanks in advance.
