I set the steak out to get to room temp (about 1/2 to 3/4 of a hour) I rub
it with a mixture of salt and pepper and at times will add a little
granulated garlic to the mix. Now the steak is about 1 to 1 1/4 inch thick.
I than heat one of my many cast iron skillet to where I think it is
smoking. very hot. Will sear the steak for 2 1/2 to 3 minutes per side.
Have a preheated oven a round 400 F degrees and will place the steak in the
oven for a minutes and look for a reading of 135 degree. Place a tbl of
butter on the steak and put a foil tent over the top of the steak and let
it rest for about 5 to 8 minutes. Juicy and delicious to our taste.

I grill steaks all the time and my wife loves them. I put a little salt
and pepper on before I put them on the grill and then cook over a high
fire. We don't use steak sauce, but if you do, put it on after the meat
is
done. Also, when buying a steak for grilling, get them with some
marbling,
which is a little fat among the fibers. If your steaks are too lean, they
may be too tough.
For the potatoes, coat them with olive oil and salt and bake for 70
minutes
in a 400 degree oven. We buy the big baking potatoes. Some people
microwave the potatoes, but they really taste better if you take the time
to bake.
Saute some mushrooms and/or onions and you're good to go.
