Charles, I have never smoked a turkey but since I have a smoker, I would use a turkey breast rubbed with my favorite rub, smoke it for two hours and turn my heat to 325 and cook for a couple of hours or until internal temp is about 170 or so maybe 180. I usually smoke chicken pieces or entire chickens. It takes a chicken about forty minutes to be cooked.
