Peter, have your shots been mainly confined to studio portraiture? The argument is not on studio work or not but your earlier (erroneous) generalized statement about "never use f/2.8" and "...amateurs who have never taken good protraits". That's kinda insult to many of us here, who are both experienced and pros, and who have many times shot at f/2.8, using focal lengths as long as 300mm.
For studio, I'd agree that shooting at f/2.8 is rare, depending on your lighting setup. But there is nothing wrong with shooting at f/2.8 for portraits. So what if the nose or ears are blur? Those are not the critical parts. I'm not saying that you always want to shoot at f/2.8 or make the nose blur; it really depends on the effect you want to create. Sometimes, if done correctly, such a technique yields outstanding portrait shots. Very haunting at times, like the subject is really staring at you. Another point to note also is the distance you are away from the subject. If you are sufficiently far enough, even f/2.0 may not render any parts of the face blur. Personally I know many good and well-known pros who shoot at f/2.8. Peter, you just got to read more photo magazines/books, talk to pros and shoot more to understand what I/we mean...
