As for size you can go as large as you want but with LCDs you aren't going
to get a lot more resolution. Standard for 19"-22" is 1280x1024. Widescreen
19"-22" will give you something like 1440x1050. Those are all in the
$300-$400 range. The HP that Javier recommends gives you 1900x1200. That's
about 20% extra viewing space but it's twice the price. If you've got the
extra money then go for it.

A 24" widescreen with 1900x1200 will get you 50% more space than a 21" widescreen with 1440x1050. A noticeable difference.

Especially good values are standard proportion 20" screens, which usually have 1600x1200 resolution.

At present I use a 19" screen with 1280x1024 and a 20" with 1600x1200, both in conjunction with a 12" Mac laptop, so I have my palettes and other stuff on the small screen and the work on the large screen, or if I'm at my desktop computer I have a 17" 1280x1024 and a 24" 1900x1200 widescreen, again with the smaller one for palettes, other documents or programs or whatever.

The large screen I use is the Dell 24", which is one of the best values in this size. It uses the same panel as the Apple 24", and is lower in price, though the styling isn't as nice. But it comes with a 4 port USB hub and a multi-card reader.
