Because we are old geezers who learned to type on typewriters, which 
were monospaced and where the standard practice was two spaces after 
the period at the end of a sentence. For proportional fonts, one uses 
one space.

Of course, email does not have fonts (unless your mis-using HTML), so 
you don't know whether someone is viewing your message in a fixed-
pitch font or in a proportional font.

But I long ago switched my habit over to a single space, since all my 
typing (with the exceptions of Email and Usenet) was in proportional 
fonts.
