A thermostat  will hold the water in the motor longer to get it up to operating 
temp,  A lot of folks get  confused over that.

Unfortunately, a higher-temp thermostat won't help, since the temp isn't 
climbing above 160 around town. It seems that I need to either restrict 
the bypass flow or the air flow through the radiator.
