It would launch Word, and Word would be told to open it, which would then puke on the file because the bytes inside are not what a Word document would be. At best, it will display a nice error saying, "This is not a Word document." At worst, it would actually attempt to open the thing, and either crash or produce a document full of garbage.
I based my answer on whether or not *cheating* is an option. If he doesn't need a true Word document, but only wants it to open in Word, the true file type would be irrelevant.

Styled EditFields are apparently saved as RTF (or a type of RTF) files on Windows and RTF files, and these, as well as plain text, open fine in Word.
IIRC, he's working on the Mac, not on Windows. You also mention creator and type above, which also apply to the Mac.
But even on Windows, I wouldn't expect Word to be smart enough to recognize that some file with a ".doc" extension is actually an RTF file with an incorrect type.
