As the owner of an Epson 740 (finally retired after five years of
faithful service and only one major clog in favour of an Epson R200),
I assure you that I could print B&W documents (I did little else with
it, honestly) using at least 10.2 and up if not farther back. In OS X
there is usually a little checkbox in the print dialog somewhere that
says "print text in black" for when the document is color but the
text needs to be pure black. And of course if the program allows you
to print grayscale/B&W (most sophisticated print programs do), of
course the Epson would honour this.
