FIrst, some of the apps give you a choice where to put the data files. I 
have my iTunes files on an external 80 GB firewire drive.

Second... in theory, you could create symbolic links (forgive me if my 
*nix term is off), of any folder you want. Think of them as really good 
Aliases. In theory, when they are setup, the OS won't know the link isn't 
the real thing. I say this is in theory, because I've never personally 
tried it in OS X (I've done it in NetBSD without a problem, but not too 
often, so I don't want to say it will always work... all I can say is the 
few times I've done it in NetBSD it has worked).

Third: plain drag and drop copies work fine in OS X for pretty much 
everything you can do it to. CCC and SuperDuper just make sure to copy 
the hidden system bits as well as the stuff you see. If you tried to 
duplicate your drive using a Finder copy, you would end up with a 
wonderful backup of all but the files needed to actually let you boot off 
the drive. In other words, it is fine for Applications and documents, but 
don't use it to make a mirror of the drive and expect to be able to 
restore to a working point unless you use CCC or SuperDuper (or any other 
similar tool designed to do that kind of job).

Fourth) Much like OS 9 and earlier, just drag and droping an application 
to copy it may end up not getting all the files you need to use an 
application. Alas, in OS 9 and earlier, any support files and prefs were 
pretty much always located somewhere in the System Folder or one of its 
subfolders. In OS X, all bets are off where a developer may have decided 
to chuck supporting files. I actually REALLY hate this aspect of OS X. 
Not so much because it happens, but because the whole freaking point of 
Packages in OS X replacing "Applications" was to avoid this very issue. 
ALL files for an application were supposed to be rolled into its Package 
so you could simply drag the Application Package around to move or copy 
it. Alas, it seems only about half (or less) of the developers out there 
actually do this... including Apple! So backing up an application, or 
moving it from one machine to another, can be a daunting, if not 
impossible task if you don't have the original installer handy.
