The RFCs are often very well thought out. The purposes of the <> in bounce
messages is to make sure that the bounce messages don't get automatically
responded to (which would produce a nice infinite loop).

[1] Don't you want to know if your E-mail couldn't be delivered to someone?
[2] If you have any users who use those nasty return receipts, they won't
be able to get them.
[3] If you don't accept the bounce messages, they will go back to the
postmaster at the remote domain, who will get upset with you (you're making
THEM do extra work for no good reason).
[4] If you don't accept messages from <>, there are a number of mail
servers that will automatically refuse your mail.
