OK. It is possible, if you must, and sometimes you must.

That is correct, the \winnt\system32\drivers\etc\hosts file. You would add
a line like this:
192.89.123.25 scanfrentz.com
That way, you're hard-coding their secondary MX record to that IP. Note
that if they ever change IPs, you're not going to be able to send them
mail, and it may be difficult to troubleshoot if you forget this entry.

That probably wouldn't work. The problem is that their backup mailserver
probably doesn't accept mail addressed that way (it might, but if so, it
would go to the "master" domain of the server -- which for a backup mail
server probably isn't the domain you want it to go to). Note that if
sending to an IP, the format "user@[192.168.114.112]" needs to be used
(with the brackets).
