Those are fairly large log files, how many incoming and outgoing messages
are you processing a day? What is the configuration of your server and what
do the utilization statistics look like during peek processing times? Are
you running Declude for spam processing or virus scanning or both? Also,
what version of IMail are you running and is it updated to the latest patch
levels?

You say that upon stopping and starting the process things went back to
normal. Was it the SMTP service that you cycled? If you do a "netstat -an"
from the command prompt when the server is stalled like this, do you see
that the server is still listening on port 25? For example:

=====
C:\>netstat -an

Active Connections

 Proto Local Address Foreign Address State
 TCP    0.0.0.0:25             0.0.0.0:0              LISTENING
 TCP    0.0.0.0:110            0.0.0.0:0              LISTENING
 TCP    0.0.0.0:143            0.0.0.0:0              LISTENING
=====

And if it is still listening on port 25, do you see lots of established or
stalled inbound and/or outbound SMTP connections:

=====
TCP    xxx.xxx.xxx.xxx:25      xxx.xxx.xxx.xxx:2595    ESTABLISHED
(incoming connection)
TCP    xxx.xxx.xxx.xxx:25      xxx.xxx.xxx.xxx:3065    ESTABLISHED
(incoming connection)
TCP    xxx.xxx.xxx.xxx:2706     xxx.xxx.xxx.xxx:25       ESTABLISHED
(outgoing connection)
TCP    xxx.xxx.xxx.xxx:2784     xxx.xxx.xxx.xxx:25       ESTABLISHED
(outgoing connection)
=====

showing possible SMTP/SMTPD thread saturation, meaning no more listening
(SMTPD) or delivery (SMTP) threads available?

Sorry for all of the questions, but I'm just trying to get a better
understanding of how you systems is setup and configured, and if it is a
possible resource issue.
