hi, the on of type oil sender,  would  say for arguments sake , have a disc
which  rests on two contacts, and when  the engine starts, the oil pressure
pushes the disc away from the two contacts , and there fore switching the
light off.

the  needle  type gauge sender unit , would   have a variable type resister
setup in side,  i suppose something like a fuel gauge   setup , where a arm
rubs along some  resistance wire and gives  a reading  proportional  to the
oil pressure .


  this is   a basic descripyion for the land lubber.......
