Recipe of the Day

This was in the Newsletter for 11/29/04. I made it the other night
and it was moist and sweet and very good..... I will be making it
again... Pat
Cornbread Cake
2/3 Cup of Butter, softened
1-1/4 Cups Sugar
3 Eggs
1-2/3 Cups Milk
2-1/2 Cups Flour
1 Cup of Cornmeal
4-1/2 Teaspoons Baking Powder
1 Teaspoon Salt
In mixing bowl, cream butter and sugar. Combine the eggs and milk.
Combine flour, cornmeal, baking powder, and salt; add t creamed
mixture alternately with egg mixture. Pour into a greased 13x9x2
baking pan. Bake at 400 degrees for 22-27 minutes or until a
toothpick inserted near the center comes out clean. Cut into
squares.. serve warm.
