Low-Carb Cauliflower Soup 
Serves for 4 to 6: 

In large pot, break apart one whole cauliflower into florets. Place 4 
14.5 oz. cans or equivalent 
of low-sodium chicken stock/broth in large pot and add cauliflower. 
Dice 1 medium red bell pepper and two stalks of celery; add to pot. 
Cook about 20 minutes over medium heat. Remove cauliflower to plate 
and cool. Reserving about 1 1/2 cups, puree most of cauliflower, 
adding a little cooled stock or water if necessary. Chop reserved 
cauliflower into chunky pieces. Place all cauliflower back into broth 
in pot. Shred about 1/2 block (8 oz.) of lower-sodium sharp cheddar 
cheese, and stir into hot broth. Whisk, and cook for 5 to 7 minutes 
to dissolve cheese. Simmer about 15 minutes more, whisking now and 
then. Taste and add a little water to dilute or use as is. For 
creamed soup, add as much instant dry milk as you like to achieve the 
texture you want. Serve.
