Thought for the Day
No matter what happened in the past, the future is spotless.

There will be no recipe exchange newsletter sent out Friday, Sunday or Monday.  To prevent the 100s of extra messages of our members asking why the newsletter wasn't sent out, I will send a thought for the day and one of my favorite Christmas recipes each day.

Popcorn Candy Clusters
1 cup freshly air popped popcorn
1 cup (8 oz.) milk chocolate chips
1 cup peanuts (shake salt off in a colander)
In a saucepan, melt  chocolate chips on lowest heat.

Add popcorn and nuts, and then stir until they are well coated.
Drop by ice cream scoop onto cookie sheets covered with wax paper and refrigerate until firm.

Note: Butterscotch chips with pecans and popcorn is extra YUMMY! The pecans should be roasted in the oven for about 12 minutes.

This is the recipe I worked up some years ago from part of one a friend gave me.

Dump Cake
1 box white or yellow cake mix (see note)
1 can (20 ounce) crushed pineapples
1 large can peach chunks (see note)
1/4 cup Cream Sherry wine
1/2 cup (1 stick) unsalted butter, melted
1 cup chopped pecans or walnuts
Non-stick cooking spray

Preheat oven to 350 degrees. Spray a 13"x 9"x 2" glass baking dish with the spray. Dump the pineapples, peaches, and sherry into to baking dish, stir to mix them spread fruit evenly over dish. Top fruit with dry cake mix, spreading evenly but do not mix into fruit. Top cake mix evenly with nuts.
Then sprinkle butter over top of nuts and cake mix. Bake in preheated oven 45 minutes or until very light brown on top. (my oven is old and temperature is off so I set it at 350 degrees and check at 45 minutes, but it may take longer in your oven.) Serve as is or topped with ice cream or whipped cream.
Note: For cake mix: I use what ever I have on hand, with or without pudding in mix. Butter cake mix. Chocolate with pears works well. You can use any type fruit. I have used canned cherries, blueberries, strawberries, pears, mixed fruit, all types of fruit pie filling. When I use pie filling I
add a little more wine to thin juice.
