Cranberry Fluff
2 Cups raw cranberries, ground up in food grinder
3/4 Cup sugar
2 Cups diced apples
1/2 Cup seedless white grapes, chopped
3 Cups mini marshmallows
1/2 Cup chopped walnuts
1/4 tsp salt
1 Cup whipping cream

Combine the ground up cranberries and sugar and cover and chill for at least 2-3 hours. Add the apples, grapes, marshmallows, walnuts and salt. Fold in whipped cream

Chocolate Christmas Cake
3 C. Flour
2 C. Sugar
1/2 C. Cocoa
2 tsp Baking Soda
1 tsp Salt
2 C. Water
3/4 C. Oil
2 TBSP Vinegar
2 tsp Vanilla

Mix dry ingredients, add water, oil, vinegar and vanilla. Beat for 3 to 5 minutes. Bake in greased and floured Bundt pan. Bake at 350° for 40 minutes. Cool and frost with Boiled Frosting

Boiled Frosting
1 C.Sugar
1/3 C.Water
1tsp Cream of Tartar .

Boil the three ingredients until mixture forms a string. Beat 2 Egg Whites until they hold a peak. Drizzle the sugar mixture into beaten egg whites and beat until fluffy. Add 1 tsp Vanilla. I decorate the top of the completed cake with Spearmint Leaves and Red Cinnamon Candies.

SUGAR FREE HOLIDAY NOG
1 package (.9oz.) sugar-free instant vanilla pudding mix
7 cups skim milk, divided
1 to 2 teaspoons vanilla extract or rum flavoring
2 to 4 packets artificial sweetener
1 cup evaporated milk

Combine pudding mix, 2 cups of milk, vanilla and sweetener in a bowl: mix according to pudding directions. Pour into a 1/2 gal. container with a tight fitting lid. Add three cups of milk; shake. Add remaining milk; shake well. Chill.

Nutritional Information: serving size: 1 cup Calories: 107 Sodium: 187 mg Cholesterol: 1mg Carbohydrates: 15 gm Protein: 10 gm Fat: 1 gm

A hand blender works very well for mixing this recipe. I'm also assuming this could easily be used as a substitution for eggnog in recipes for baked goods, provided that a small amount of white and/or brown sugar were also used to aid browning and crusting.
