Old Fashioned Banana Pudding Recipe
3/4- cup sugar
1/3- cup all purpose flour
dash of salt
4 eggs separated and yolks beaten
2-cups milk
1/2 teaspoon vanilla flavoring
5 to six bananas
Mix sugar and flour and salt. Add eggs and 1 cup milk. Stir till smooth and add one more cup of milk. Cook over low heat until thickness desired. Remove from heat and add vanilla. Before cooking pudding layer wafers and bananas. Pour pudding over wafers and bananas.
Whip egg whites and add 3 to 4 tablespoon sugar and 1/2 teaspoons vanilla. place on top of pudding. Preheat oven to 425 degrees. Place pudding in oven and cook till brown being careful to watch for it will brown quickly and burn if not watched closely.
Some boxes of Nabisco Nilla Wafers has the recipe on side of box. I usually make 1 and 1/2 the recipe for my family likes the pudding not to be too dry.

Sweet Potato Salad:
2 pounds sweet potatoes (boil, cool, peel and dice)
1-1/2 c. or Miracle whip
2t. Dijon mustard (no substitutes)
1/4t.salt(opt.)
4 hard boiled eggs (peel and dice)
1-1/2 c. chopped celery
8 green onions (sliced)
chopped sweet pickle (we like a lot)
Mix all together and chill.

RAISIN BRAN MUFFINS
1-15 oz. box of raisin bran cereal
3 cups sugar
5 cups flour
5 teaspoons soda
2 tablespoons vanilla
2 teaspoons salt
4 eggs, beaten
1 tablespoon pumpkin pie spice
1 quart of buttermilk
1 cup melted shortening (1/2 oil - 1/2 oleo)
Mix all together and bake at 350 degrees for 20-25 minutes, or store batter in refrigerator for up to 6 weeks. Just bake as few or as many as you wish in the morning.
