Porcupines
2 cups dates, chopped
1 cup brown sugar
1 cup walnuts, finely chopped
2 tsp. butter or margarine, melted
1 tsp. vanilla extract
1 egg
flaked coconut for rolling
Beat egg, and then add brown sugar, melted butter and vanilla. Add dates and nuts. Roll into small balls. Roll in coconut. Bake at 350 degrees for 10 to 15 minutes. To make rolling easier refrigerate for 1/2 hour.
These are very yummy. A friend gave me this recipe about 30 years ago.

Sun Dried Tomato Dip
1 cup extra virgin olive oil (must be)
4 finely chopped sun dried tomatoes
2 small hot peppers
2 large pinches oregano (preferably fresh green if available)
a little salt
1 crushed and very finely chopped garlic clove
Note: the more finely garlic is chopped the stronger the flavour is as more natural acids are emitted.
Place everything together in a bowl and allow it to stand and soak for about 2-1/2 hours. Remove the hot peppers and then beat everything together well with a fork. That's all there is to it and knock yourselves out with the grilled country style bread I mentioned
earlier.

Refrigerator Mashed Potatoes
Makes 8 cups or 12 servings
5 lb potatoes, peeled & chunked
6 oz light cream cheese
1 cup light sour cream
2 tsp onion salt
1 tsp salt
1/4 tsp white pepper
2 Tbsp light butter
Cook potatoes in boiling salted water until tender. Drain. Return to the pot and mash until smooth. Add the remaining ingredients, beating until light and fluffy. (I often use a mixer since this is such a big batch.) Cool. Store in a tightly covered container in the fridge, up to 2 weeks. To use, preheat the oven to 350 degrees. Place the desired amount of potatoes in a buttered baking dish, dot with additional butter (or spray with butter-flavor cooking spray) and bake for 30 minutes. The taste is similar to twice-baked potatoes.
