Down Home and Southwest Recipes http://www.farmer-john-and-wife.com ================= I just tried this recipe last night! Yummmm Just had to pass this one on! Ranch & Bacon Hashbrown Bake 1-1oz pkg. Ranch salad dressing and seasoning mix 1 1/4 cups milk 3 oz cream cheese, softened 6 cups shredded hash browns 1 TBSP bacon bits 1/2 cup shredded cheddar cheese In a blender, combine salad dressing mix, cream cheese and milk. Blend until smooth and creamy. Pour over potatoes . Sprinkle with bacon bits. ( I used a lot more than 1 TBSP) . Top with cheese. Bake @ 350 for 35 minutes. Next time, I think I will wait until the last 5-7 minutes of baking to add the cheese. Lori R. Topeka === Mary's Fresh Tomato Salsa 7 cups peeled diced tomatoes 1 cup chopped red and green peppers 2 cups chopped red onion jalapeƱo peppers: 2 (mild), 4 (medium) or 7 (hot) 1/4 cup chopped fresh cilantro or coriander 3 large garlic cloves minced 3/4 cup white vinegar 2 small cans of tomato paste 1 tbsp salt (pickling salt) Simmer for 1.5 hours, or shorter time depending on desired consistency Bottle leaving 1/4 " headspace Place in canner for about 1/2 hour (Hot Water Bath) I have just finished making my third batch, and it is wonderful Marge in Oshawa Canada === PUMPKIN COOKIES 1/2 c. butter or margarine 1-1/2 c. brown sugar, packed 2 eggs 1 c. cooked, mashed pumpkin (can or fresh) 1 tsp. vanilla 2-1/2 c. all-purpose flour 3 tsp. baking powder 1 tsp. salt 1 tsp. cinnamon 1/2 tsp. allspice 1/4 tsp. ginger 1 c. chopped walnuts (optional) PUMPKIN GLAZE: 1-1/4 c. unsifted powdered sugar 2 tbsp. butter, softened 1 tsp. cinnamon 1/4 tsp. allspice Dash of nutmeg 2-3 tbsp. mashed pumpkin Cream butter and sugar. Beat in eggs and pumpkin until light and fluffy. Stir in vanilla. Mix all dry ingredients together in a bowl. Stir into creamed mixture to make a rather soft cookie dough. Stir in nuts. Spoon onto greased cookie sheets about 2 inches apart in rounded teaspoonfuls. Bake at 375 degrees for 12 to 15 minutes. Remove while hot. Cool slightly. Then glaze with Pumpkin Glaze. Stir all ingredients together, except pumpkin. Then blend in pumpkin until smooth.
