A few comments.

Image the laptop and run the image from an image file on the external hard
drive.  This should leave room on the external drive for either an install
of your virtual machine software or the installer for your virtual machine
software.  This will allow you to "easily" use it with any laptop or desktop
available.

One nice thing about VMWare / Virtualbox is that the virtual hardware is the
same on all machines so once you get your install comfortable on it, you can
then run the image on any computer and don't have to worry about drivers.

Unfortunately, by doing it my way you will not be able to just install the
external hard drive internal to the laptop and boot it.  Also, you may find
that the laptop you buy won't support your external as an internal.  Some
laptop makers, especially of small laptops have gone to 1.6 (1.8?) inch
drives and you will probably buy a 2.5 inch drive.  (more capacity, better
speed)
