Your hardware will be 64 bit unless you buy something really cheap and nasty. Windows 64 costs the same as Win 32 (and uses the same key).
64 bit becomes a benefit (memory wise) above 3 - 3.5 gb depending on your video card. There is not much of a difference performance wise that I have seen. I have 2 machines running win 7 64 bit and previously Vista 64. No problems in the past few months. 8gb ram is fantastic for virtual machines.
