Cost and size of IDE drives are definitely a plus. Speed on these PCI Macs is 
likely comparable considering the 33 MHz PCI slot and 50 MHz bus limitation.

The best sustained read/write data transfer rates I could attain were about 
20 MB/sec with an ATTO UL/2D LVD SCSI card and a pair of WD 18 GB LVD drives 
attached with all the appropriate cabling in my G3/466 equipped 7500. 

I suspect a good IDE card with appropriate hard drives would perform as well.

The other consideration is reliably. I have heard SCSI's are more resistant 
to drive failure; another question to consider.
