During our two week visit to Scandinavia, my wife grew tired of
all the fish, so I took here to a steak house in Bergen. When I
asked for my steak rare, they warned me thee times about how a
rare steak would be red inside, and might even appear bloody.
When I finally got the steak, it was medium rare instead of rare.

made from a chuck roast, which is not a tender cut. But it's a
very flavorable cut. When cooked for may hours, it can be a delight.
