iPeng doesn't play the music, so it can't show the VU Meter. Album art is being shown in iPeng, actually always. Same for the playlist. Plus Lyrics, if you install the SongInfo/SongLyrics plugins. That's what iPeng shows on the NowPlaying screens.
You can't really compare the IR remote to iPeng or any of the other Apps. iPeng, like the Web interface, controls the player directly through the server (the Squeezebox players are always controlled through the server, even if you use their own UI). The IR remote, on the other hand, controls the user interface on the Squeezebox. It's like a mouse for a computer, you can select a menu and click on it.
