there are a lot of considerations
first off, is your monitor profiled and/or calibrated?
2. you are correct in adjusting exposure to capture the best range your camera is capable of...but that does not necessarily mean you won't have to make some adjustments within photoshop
3. you did not mention how the image is to be used and color space?
what I might suggest is starting with an image that has good highlight detail and use levels to lighten the shadows and/or mid tones(assuming the color is ok...) make sure whites with detail are not 255/255/255...use the eyedropper tool and info pallete...and while you are at it, look closely at the paper base the painting was done on...it probably is not pure white, and actually might have a color cast...so make sure your digital file reflects the same color shift.
