Hi David I used your "test" on my 1DS and got a similar result - a kind of large criss-cross pattern of uneven noise in red and yellow.
But I don't think I regard it as a fault. It's invisible in normal use, and I think that applying a drastic saturation boost just a way of exaggerating the noise that's normally present in the images. It makes scans look like crap too.
