I've used these techniques several times with good results. It takes
some practice, but hey, if it was easy anybody could do it - and that
would make it HO <GRIN>.

Actually I just finished an enjoyable day changing numbers on a couple
troop sleepers, lettering some troop sleeper express car rebuilds and
an REA express box (Thanks for the decals Des Plaines!). The NYC had
as many as four paint and lettering schemes for these express cars.
When I did the artwork for them, I covered three. Now, finally, I'm
lettering some of my own cars for the second scheme.

I've commonly re-numbered cars to make them a bit more unique or cover
a wider numbering range when I have multiples... like reefers. Take a
scrap body and do some practicing on technique, but re-numbering on
brass or plastic can be a one evening project.
