For consumption on the second and third day after baking, I wrap my 
home-baked bread in beeswax-impregnated cloth and store it in the fridge. I 
only bake one fairly large loaf at a time, and between my wife and I that's 
enough for two or sometimes three days of lunches.

Give that little doll-face dumpling a squeeze from me - she’s so lucky she gets 
to start out her life riding a Rivendell designed  for her! How many other 
babies can say the same!

I bet your Bebe rides a lot like my Clem, which means you’re going to love it 
whether hauling kiddos or riding mountain trails. And you got in that luscious 
blue that you will never tire of.

I really hope we hear more out of Walnut Creek about this new Cheviot soon. I 
don’t want to nag Riv so I won’t ask, but I’ll tell myself it will be 
Christmas, and if a Cheviot ends up at my house before then I’ll be thrilled. 

Oh, one more thing. Remember when the Anniversary Mixte was all the rage and we 
were going to meet up and make a big thing of it? If COVID restrictions are 
lifted and the new Cheviots come in at a time when the weather is favorable, a 
bunch of us should meet to pick up our bikes and ride them and drink all the 
coffee and whatever else. Wouldn’t that be so fun?

I use different tools for different kinds of stays:

   - For the Honjo/Berthoud "wraparound" kind, I use a small pipe cutter 
   
.
 
   Pipe cutters slice through the aluminum stays easily and leave nice ends 
   that seldom require additional finishing.
   - For the Planet Bike/SKS "stick up" kind, I break out my angle grinder 
   and eyes & ears, to make quick work of the stainless steel stays. Trim and 
   finish with just one tool.

If the Atlantis, Homer or Sam were all set-up the same as far as racks, 
bags, gear, etc., none should feel any heavier than the others.  Since 
you're in Rivendell's back yard, they can advise you on appropriate 
gearing.  They typically use wide range cassettes (e.g., 11-34 & 12-36) so 
with their "wide low double" (26 x 38?) you get a low gear that will exceed 
your 1:1 spec.  

Since they went to the long wheelbase, lots of the geometry specs have 
changed. Comparing frame sizes based on seat tube length can be deceiving.  
I have a 58 cm '03 Toyo Atlantis.  A while back I tried out a new, long 
wheelbase Atlantis at Riv.  They asked me a couple of questions, grabbed 
one out of the line-up, set the seat height & said "have fun, and let us 
know what you think".  It rode more comfortably than my bike and handled 
well on the trails.  When I returned, they told me it was a 53 cm, but due 
to the sloping top tube it fit me as well as my 58, while providing gobs 
more standover height (a desirable characteristic on trails).

You say you've bought the Atlantis.  Just build it up & enjoy it.  I think 
you'll be pleased with the ride & handling.

My two ridable Rivs are opposites on the Riv spectrum. The svelt Quickbeam 
as a fixed gear cross bike and Gus Boots Willsen as an MTB all ways hauler. 
Do they feel different to ride? Absolutely. The reality is, however, that 
for all that, they arrive to the same spot on the same trail under the same 
conditions within minutes of each other. Each is a delight to ride and you 
will love the Atlantis. The engine matters more, and every Riv you ride 
will have the same engine. No way round that. Grin.

However, it was too late I wanted a new bike.)

I had always planned on getting a 63 MUSA Homer, but I just bought a New 
Atlantis frame based on the following logic:

1. The best bike i've ridden has been the my dads Homer 63 cm Toyo.  
2. I've loved my Sam but i always like how the Homer was bigger (and it 
felt longer).  The new bikes in the running (New Homer, New Atlantis and 
Appaloosa) are all even longer than the 63cm Homer
3. Shell ridge is very close to where i live and i would be interested in 
riding there.
4. Even if I was going to get the New Homer, it's sold out in my size.
4. Will @ RBW said an Appaloosa with Homer sized tires will feel more like 
a "Homer" than a Homer with big tires would.
5. Appaloosa is also sold out.
6. New Atlantis even longer and sturdier 

I'm possibly going to cannibalize the Sam and then sell the frame, the 
silver sidepull brakes, and possibly the crank if RBW can't help me get a 
1-1 ratio out the small ring.  Or sell to family member.

My brother has a 62 hunq and it doesn't feel a little heavier to ride than 
the homer, but not dramatically so.  I've read the "weight thread" and I 
still don't feel like i know the answer and so i thought it would ask 

*Is the New Atlantis going to fill "heavy" compared to a Sam or Homer?*

Happy to have my bike confused for one of Leah’s!

The rear seat is just for looks for now - though we are hoping to adopt a 
second child! Currently the rear rack is a support rack, not enough weight 
bearing for a baby seat. But I have a suitable rack ready for the rear seat 
(max 40 pounds) once our little girl is too big for the front seat (max 33 
pounds).

I would be thrilled if things line up so I can have babies both in front and 
back one day though! And after that I’ll be happy to make the Rosco Baby into a 
bike packing mountain trail machine, it’s flexy and stout all at once, really a 
great ride!

I like this attitude. There is no right of wrong. 

One tip I have learned from this thread was to plan for my water consumption. 
That was the sort of no brainer thing that I never considered. I was happy to

I have a Bafang front hub motor on my Sam Hillbirne with instrumentation
and control by Grin Tech iof Vancouver, BC. With PAS as well as throttle, I
can travel 28-36 miles on my 36V / 14.5 Ah battery. I have an anti slip
lever attached to the front axle to retain the motor in my front dropouts.
So far, I've found it to be a smooth set up. Grin does a good job with
technical assistance.

do some bending.  

John G. The tires are 700x32 and def the max size with fenders.  I don’t like a 
large front bag except for commuting, so my plan is a large rear bag and small 
front bag. I can fit most everything I would need to have while riding in the 
front with a small bag.  Anything I need while stopped can fit in the back no 
problem. It is backwards to the typical brevet bike, but works for me.

trips to the local ebike shop for spacers at the BB and spacers on the 
ring. Each install may need some tweaks like that.

[RBW] A Corona-Virus Aid Project

This is Rich (Riv wheel builder). I have 1 slightly-used rim (tubular, 700/32 
Mavic GP4, with a Vittoria Cronometro CS tire), and one new Mavic CXP 33 which 
has been previously laced.

I propose the following: You choose a hub, I build the wheel (cost will be 
$175+cost of the hub), and I will donate all proceeds to a homeless shelter 
(Trinity House) here in Walnut Creek.

Are you using commercial yeast or sourdough starter as your leavening?  And 
what is the moisture content of the bread you are making?  Simply divide 
the grams of water used by the grams of flour.

I make sourdough bread with a fairly high moisture content in the loaf 
itself (70%) and bake it in a dutch oven, which develops a nice thick, 
crunchy crust.  That does a pretty good job protecting the loaf, and I put 
the cut side down on the counter.  That last a few days before the crust 
gets *really* hard, but the inside is still soft.  Sometimes after a few 
days I'll put the loaf in a sealed container (pyrex bowl with a lid) and 
that softens the crust up enough to make cutting easier.

I've heard of using bags like this 
, but have not felt the 
need to try them out.

I am in Minnesota/Wisconsin and although it is usually drier in the winter, 
it is still far more humid than your climate.  However you could try 
keeping the cut side down, making a loaf with a higher moisture content 
(especially since you are using whole wheat flour), and try building up the 
thickness of the crust.

I'm ready with my money, too!  This new Cheviot is a beauty with that 
swoopy tube.  Though my favorite color is blue, I would be very happy with 
the silver because I could dress her up with a bright blue bag and tape, 
maybe some blue "bling" like pedals, hubs and bolts.  I'm going with light 
weight fancy wheels, maybe tubeless since that's what all the cool 
#RivSisters seem to be doing and I love a group effort.  I'm looking 
forward to hearing an "order now" date!

I second that sentiment on the practicality of mixtes for all folks. Mixtes
are just pure magic. There was about a year after getting my Clem-L where I
just refused to throw my leg over a top tube. It was all smooth Clem-L
riding that I would do. M.O.M. Is also a delightfully confusing acronym for
us men on mixtes.

Welcome to the group Jim, and back to your bike!

In another discussion about handlebars I had an experience in pursuit of 
"best for me" bars that was similar to the Moustache bar dichotomy. I'm 
either short of torso for my height or long of leg for my torso...and I 
need a short reach. I can get that by an under square frame or by bodging 
my fit with short stems and short extension drop bars. In that conversation 
I noted the new crop of gravel-oriented bars feel very confining at two 
positions and too narrow on the hoods or tops. I had a chance to get an 
XO-1 and had a reality check about the bars on a ride (was a dealer) and  
getting a purple XO-2 with the WTB Dirt Drops instead. 

Grant talked me through options for an adventure road fit (in 2000) and 
extolled a frame that was in container, crossing the ocean with a 2° 
upsloped, undersquare top tube and 2cm extended head tube he designed for 
long rides and light loads with inspiration from French randonneuring. I've 
had that Rambouillet ever since. We can compare beausage later. Nothing 
grossly unkind, just a collection of two decades of moments. I earlier 
proposed "beausavage" to better represent the diary that my orange bike's 
finish represents.

First, I appreciate being part of this discussion group and reading your 
thoughts on one of the favorite parts of my life (bikes).

My psychology of riding has been heavily influenced by Grant’s Just Ride, that 
he gave me when I purchased my Roadini.  I started to feel less need to meet 
the “shoulds” in my mind - I should ride fast, I should get my heart rate up, I 
should have an aggressive riding posture, I should only go for a ride if it 
will be long enough, etc.

My belief about riding was further influence by the TED Talk How Bicycling 
Connects Us At the Speed of Discovery.

I shifted my speed expectation to 10 mph, give or take a couple miles - I 
started to notice more stuff - shapes of trees, garbage on the ground, and I 
started to make more contact with other people - pedestrians, bike riders, even 
people in vehicles.  

I still struggle with getting irritated by walkers, riders and drivers whose 
behaviors interfere with where I want to get and how fast I want to get there.  
When this happens, and if I am on top of my game, I let the movement of others 
and myself play out, like some kind of disorganized dance, and then I am on my 
way again, enjoying the turn of the cranks, my feet on the pedals, feeling the 
wind in my face, looking at all the stuff around me.

I was reading a little about the safety value of the Tigr lock - some of what I 
read was not favorable.  I use my Tigr lock to secure my front wheel because I 
don’t want to be bothered with removing it for locking.  Good luck with this!

[RBW] Friction Shifting 9-10s Question

I’m running 1 x 10 friction on my Clem H with a clutch derailleur and wolftooth 
chainring (38t) and feel like it’s the quietest, smoothest shifting I’ve ever 
had.  I paid close attention to centering the chain line, and had to experiment 
w a couple BB’s before finding it.  Maybe that effort is what makes the 
difference, maybe it’s the clutch.  Either way, even w the longer Clem chain, I 
find it quieter and smoother than the 2x9 drivetrains on my other bikes.

[RBW] Friction Shifting 9-10s Question

Friction shifting lets me swap wheel sets around like nobody's business as I 
have 6, 8 and 9 speed set ups among 4 bikes.  I find wen I am very tired, that 
my lever control is less precise and I am more likely to ghost shift. I have a 
quick talk with myself and then get the chain properly seated in whatever gear 
is needed. It seems to happen less on my DT shifting bikes than bar enders.

tasks if not to standard. The open display of waste using disposable PPE 
incorrectly, without it having a chance of providing the benefit potential 
to users who wear them, is maddening. Worse are those who appear to elevate 
PPE like a spiritual protective icon and display such poor discipline in 
public that they must believe in supernatural powers of their nitrile 
gloves, face shield masks and (i'm not kidding) ponchos. People want to 
believe in something and this situation has made it visible in public. 
Brand names or branded items had been a way people differentiated 
themselves, now it seems to be the procurement and display of PPE. 

I learned and used closed loop communication in critical moments in the 
military and healthcare. It gives closure and verification that what you 
said was heard, acknowledged, responded to in act and completed. It's 
ingrained enough in me that I think the public health posture at all levels 
needs to look at what they see on the street as their feedback because they 
won't see much of their message being acknowledged intact. I hope the quiet 
majority who are out of sight, at home, not touching things, not flaunting 
disposable PPE but rather preserving them for the moments when its precious 
use is necessary or using alternatives like bandannas suffice. Makes me 
think of Hopi Kachina dolls that are given to those who will be respectful 
and care for them responsibly. 

I ride my bike to and from work because it provides opportunity to connect 
with the world while separating from both home and work while en route. 
Most people at the end of a hard day have a little black cloud over their 
head that goes right into their car with them to go home, little chance for 
separation. I enjoy what the dark, the cold and the wet contribute to those 
ends. Even more so these days. I have found a much more clear appreciation 
of cycling these days and to my observation, so have many others. they are 
doing it in pursuit of the act itself, in normal clothes, going places. The 
performance riders in their kit and spacebikes seem to have reverted to 
Peloton in their basements. 

We've "quarranteamed" with our young friend in her last semester of nursing 
school. As the pandemic got foothold in the US and local actions were 
imminent we reached out and invited to her to spend it with us at our house 
for a number of practical and psychological reasons. It's been very helpful 
for all of us to have a bit bigger table set for for meals and daily life. 
She did insist on bringing her bike and we have been on many rides to 
maintain perspective. 

I have had a lot of thoughts on cycling for myself these weeks and I hope 
as things resolve and open up I'll be able to realize them, with great 
value.

Paul, yes! I do a Katy Trail loop, very similar to the one you describe. You 
must live pretty close to me here in North Dallas.
I would say that my standard South Loop. Crossing 635 @ the Skillman DART 
Station footbridge, head down the Skillman Sidewalk to around Abrams, up to the 
So Pac trail, across to Mockingbird Station,  Katy Trail, etc. That's 24 to 32 
miles depending. Sometimes I cut across to Hillcrest/Forest, run down Bodecker 
to SMU, but I  dislike the part along Northpark mall, generally too many HP 
Soccer Moms.
I have been trying to use the North Haven Trail more & more, they've got it all 
the way past Marsh now and I believe they are going to link it up with a series 
of trails that goes all the way to Fort Worth.

I am planning on driving up & riding the NETT in East Texas fairly soon. 

I am afraid 40 miles is about my limit, my knees are crap.

I am Already over 300 for the month, if not for the rain, I'd probably be 400. 
Unfortunately if I am over 300 it's mearly an exhibition of irresponsibility 
and a sign I should be thinking about doing something productive. 
Leah, I sure no one here tires of your smiling face (or Clem), better that then 
my big melon head! 浪

For those that need a 73 x 127 ST BB the Tange LN-3922(steel cups) and 
LN-7922(Aluminum cups) are also available. 

Those widths are because of the relatively straight arms of the crank. It's 
gotta make for some cruddy chain angles in the middle ring/large cogs 
though. This is where the so called advance from 7 speed hubs to 8/9/10 
went off that rails a bit as far I'm concerned as the smallest cog moved 
toward the centerline and the chaninrings moved further out. Anyone with a 
lick of intelligence can see that's ass-backwards. 

Then again  ... I find myself laughing at all of this ! For all the 
"progress/regress" in the world if you really detach yourself from the 
train-of-thoughts-link-ing  the whole ch'bang is Eternity's game of 
Self-hide-and-Self-seek  "Peek-boo-where-are-You ? .. 
Peek-a-boo-now-I-see-You !" . to "play stupid/deaf/dumb/blind". 
Literally utterly dis-able yourself " for awhile" so you can "magically 
re-member" just how Infinitely cap-able you truly are... which is limitless 
 boundless Infinity's Infinitely Infinite Self.   The Gem so sought
