Jennifer, What AV are you using? Most (all?) are capable of auto-update. I use Symantec and grab updates 4 times a day automatically. Scanning mboxes is automatic too. Patching servers doesn't take all that long. Cleaning up from a hit, well that's another story, we've been lucky so far.
