You first have to locate Messages on one of your home screens and then move it back to where you want. I just the other day posted very precise instructions on how to move apps, maybe you can check the archives or somebody can do it for you; it's been too long of a day for me to do it tonight.

Couldn't you use the Be My Eyes app first to get a sighted helper and make sure you have all the documents properly oriented, then scan/photograph them. You could also use Aira, if it is only a couple of pages the free 5 minute call will probably be enough and they will take the picture for you
