You can probably pick up a Radius VideoVision Studio PCI pretty inexpensively. :-) It's no longer supported though, but they were well thought of in their day. I have the NuBus version in an 8100/110 but haven't gotten around to actually using it, except as a very complex video card. I think for good analog capture with high resolution and frame rates in a supported product you'd probably want an Aurora Fuse but those run upwards of $500, I think. If your needs are more modest, you can probably do okay with some of the video cards that have capture built in. Also, some folks recommend a digital video camera which has an analog input.
