Another important question just occurred to me:
The file structure changed from classic old type to HF-something with system 8, if I recall. Will my J700 just take that in stride as part of running 8.6 and above, or is there something I need to do? I'll be dedicating a fresh HD to the endeavour.
In 8.1 HFS+ was introduced. Any system before 8.1 cannot read HFS+ formatted disks, so if you used HFS+ on your new disk with an OS after 8.1, then you could still read your 7.6.1(HFS) files transparently. If you booted into your 7.6.1 System, you would not be able to read the files on your HFS+ disk. HFS+ will save you a lot of disk space over HFS, especially with larger volumes/small files.
