There are a couple of ways to learn Unix under DOS.

1. Commercial tutorials
2. Shareware tutorials ( the program LX from a canadian company comes to
mind - it includes also lessons on shell programming )
3. Freeware unixlike tools
GNU BASH is the Bourne shell of Unix/Linux available also for DOS
   Korn shell for DOS (mssh23.zip)
(The author assembled also a package of utilities for this shell)

A big bunch of ports of common unix programs like
at, cp, cut, chmode, grep, head, ls, man, paste, page, pwd, rm, tail
   and some more.

Unix editors for DOS: emacs, microemacs, calvin, elvis, vim, sed

Many of our internet tools for DOS are ports of the original Unix programs
(dosppp, Lynx, all the wattcp utilities like rlogin, lpd, ping, nslookup and
some more). Even the original DOS program KA9Q behaves in certain points
like a Unix program - e.g. it uses slashes instead of backslash.

So with a little effort you can set up something like a "single user, single
tasking CLI based UNIX/LINUX under DOS".

Check out www.fdisk.com/doslynx
          www.gnu.org
          Simtel
and get the newest developer release of Lynx386.
