I did an Ubuntu server install for a friend not too long ago and I was
very happy (I run FreeNAS with Michael Herger's plug-in for
SqueezeCenter, but that's a different story). Back to Ubuntu.

The thing I liked about Ubuntu was the availability of repositories and
apt-get is very easy to use (I used Debian for years with Knoppmyth but
run OpenSuse on my desktop). SC installs fast and easy and you can
install Webmin for admin of the box outside of SC. 

Ubuntu server was running on a dual P3 533mhz with 512mb ram and it
performed very well. If you are willing to learn a little then it would
be a fun route to take.
