Ubuntu 8.04 LTS is going to be far less of a hassle than Gentoo. Gentoo can be "lighter weight" but it's not going to be noticeable on a 2ghz+ machine. I would suggest just installing Ubuntu Desktop with an external monitor, install squeezecenter, and then just leave it running without being logged in. This should be a reasonably simple and worry-free setup.
