This is the most important criteria, IMHO, if you have a buddy who will help for a beer or two use whatever he likes. I would use debian in preference to Ubuntu, as Ubuntu is just Debian with extra stuff and a more frequent schedule. For a server, you don't need frequent updates. I can't comment on Gentoo vs Debian, as I haven't used Gentoo Some of this depends on how much you want to try new stuff. As XP is what you know, there will be learning curve.
