This is the most important criteria, IMHO, if you have a buddy who will
help for a beer or two use whatever he likes.

I would use debian in preference to Ubuntu, as Ubuntu is just Debian
with extra stuff and a more frequent schedule. For a server, you don't
need frequent updates.

I can't comment on Gentoo vs Debian, as I haven't used Gentoo

Some of this depends on how much you want to try new stuff. As XP is
what you know, there will be learning curve.

But if all it takes is a beer or two, get what your  buddy drinks and
have it cold when he shows up
