That's a mighty powerful machine for just running SC.  I think it is
going to complain like Marvin- "Brain the size of a planet ...".  My
server uses a Via PC2500e processor and has graphics and audio
on-board, 1 GB ram, and 500 GB storage.  VERY simple, low powered, low
cost (mobo $60, memory $20) and quite a bit slower than that monster
you're building, but 100% up to the task of running SC and serving
about 700 CDs worth of audio to my SB3 and SBR.

If you want maximum reliability, linux is the way to go.  With windoze
you need anti-virus, anti spy-ware, and constant updates that will
reboot the machine, usually when you are demonstrating the
wonderfulness of it all to your friends.  

Linux, while very reliable, has other issues.  It doesn't natively
support NTFS HDDs.  This isn't really an issue until you try to use an
off-the-shelf external disk to backup your music on the linux machine. 
You could format the external disk to a native linux format but then
you'd lose the ability to pass it around among friends.  Assuming you
leave it NTFS, you will have to learn how to get NTFS to work and maybe
(if you're unlucky) how to get a USB HDD to automount when you connect
it to the linux machine.

I was faced with the same OS decision a couple years ago and was so
fed-up with windows that I decided it was time for this old dog to
learn some new tricks.  Linux isn't really any harder than windows,
just different, and there's plenty of on-line info available to help
sort things out.

If you go with linux, you won't have to run anti-virus, anti-spamware,
pop-up blockers, etc. and you'll never have to worry about the machine
deciding to reboot itself when you need it to work the most.  In short,
linux is going to work as you would expect a computer to work, not the
way most of us have been programmed to think is the normal way.

I urge you to step outside your comfort zone and give linux a try.  You
can always go back, but if you put in a little effort and are
successful, you'll start wondering why you and most other people have
put up with M$ crap for so long.  I suggest you install one of the
flavors of ubuntu because it works with most hardware without any
messing around.

One more thing...

Bittorrent is fine for grabbing mp3 files, but for some reason,
lossless files are rare.   What you really want to do is DL a free copy
of Pan newsreader use it to search for newsgroups with the word
"lossless" in the name of the group.  Pan is available for windows and
linux.
