During install, you can do a custom installation, so that only some
components are installed. However, that is not recommended, as it will
not save much space and you may lose some function. Unlike Microsoft
Office, OpenOffice is a fully integrated office suite, that brings many
advantages over the ways things are done in Microsoft Office. It also
means that much of the code is shared among the various components, so
that only the component specific code is not installed, if you do a custom
install.
