Mary, I'm sure that without the HDMI connection established you will get very funky results because of copy protection and of course you will have to use the tosslink output for audio but you should be able to at least move around in the menus.
Since you are no longer under warranty, I would bite the bullet and do a restore via your computer. All you need is a usb cable with a micro usb connector for the back of the ATV. Not sure about how it works on a Mac, but on a PC it's dead easy. When your ATV is plugged into your computer via usb, it will show up in your iTunes under the devices tree branch and if you tab through the options there one of them will be "restore". Hopefully someone with a Mac can be more specific, but it's very easy to do and probably the only option you have left I'd say.
