Well, I don't have that behavior on my Nexus tablet, so I don't think what you're experiencing is typical behavior for Android. You may want to ask about this on an Android list to get help getting it resolved.

I believe you're wrong about the default apps. When I tell Google to launch
settings, I get this dialogue asking me do I want to launch settings. There is
only one settings app on my phone. That is just the latest example. But this is
an iOS list, so this discussion is off-topic.

OK Google does have a set of music commands. Check out

Also, you shouldn't always be getting a dialog asking if you indeed want to run
an app. I suspect this is because you have multiple apps on your phone which
can all do the same thing but you haven't specified a default, which you can do
by double tapping the always button when you get that dialog.

Well, I am not subscribed to Google play music. I know you can get some of it
for free. But I don't think you can ask Google assistant to play such and such
a song from Google music, can you? I have a hard enough time getting google to
just open an app without presenting me with some stupid screen requiring that I
double tap something to say yes, I do in fact want to open this app. And Google
doesn't have a walled garden. Therefore, I think the whole thing is a lot more
complicated than you seem to think it should be.
