I use iServer for my UNIX hosting and another service for NT stuff, so I'm
somewhat familiar with what you're talking about. Here's a short list of
what I'm glad I have "near" superuser privileges for:

setup mail accounts whenever I want to, as many as I want
setup email aliases, reroute email that needs a quick temporary reroute
setup and adjust autoresponders
setup .htaccess files
install software
perl myself to a frenzy
setup 404 redirects (to catch those stray people coming in from some
outdated search engine listing) and custom 404's

There's surely more, but I'm kinda veg'd right now (5 hour client meeting
today and another coming tomorrow! - no complaints, though, just a little
drained)
