Umm, did you take a look at the docs that come with RedHat? I'm sure you
paid less than $250 for it. :)

Stay away from WINS, use DNS if you need to. Might be a good idea to
setup the Linux box as a caching DNS server and point your NT box there.
Your gateway should be whatever box is going to route to the Internet. If
you aren't doing that you won't even need a gateway.
The Linux box is a good choice for this. Check out the stuff on IP
masquerading..
