Taxes

At an open conference in Vermont, the state tax commissioner asked 
the audience which sort of taxation they thought was the most fair 
and equitable. There was a pause, and then a white-haired man in the 
back raised his hand. The poll tax, he said. But the poll tax was 
repealed some time ago, replied the commissioner. Ay-yuh, declared 
the old man, that's what I like about it.

The Ref

After a recent college basketball game, the coach spotted a cell 
phone lying on the floor. He picked it up and handed it to one of the 
referees, saying Here's your phone. What makes you think it's 
mine? the ref asked. Easy, the coach replied. It says you missed 13 calls.

Taxes Are Patriotic!

A Dutchman was explaining the red, white, and blue Netherlands flag 
to an American. Our flag is symbolic of our taxes. We get red when 
we talk about them, white when we get our tax bills, and blue after 
we pay them. The American nodded. It's the same in the USA only we 
see stars, too!

Unforgiving

A minister parked his car in a no-parking zone in a large city 
because he was short of time and couldn't find a space with a meter. 
Then he put a note under the windshield wiper that read: 'I have 
circled the block 10 times. If I don't park here, I'll miss my 
appointment. Forgive us our trespasses.' When he returned, he found a 
citation from a police officer along with this note 'I've circled 
this block for 10 years. If I don't give you a ticket I'll lose my 
job. Lead us not into temptation.'

The Recipe 
How about a super sandwich recipe for the Spring and Summer too? Oh, did
I tell you I love asparagus? Let's do it! 
Grilled Asparagus and Mushroom Cheese Melt 
4 slices farm bread
2 ounces smooth Dijon mustard
1 lb. grilled asparagus
2 grilled portabella mushrooms
4 ounces cheddar cheese, sliced
olive oil
balsamic vinegar
salt and pepper 
Clean the portabella mushrooms with a towel and rub with olive oil and
baslmic vinegar. Season lightly with either my dry rub seasoning, or
just salt and pepper and grill. Keep an eye on them and remove them off
the direct heat when close to done done. 
After trimming the asparagus where you want them, drizzle and toss them
in olive oil. Season with salt and pepper. They won't take long so keep
turning them and remove when done. 
Spread each slice of bread to the edge with a little over a half ounce
of the mustard. 
Top one slice with the grilled asparagus, grilled mushroom, and sliced
cheddar. Close the sandwich and lightly brush the outside of each slice
with olive oil. 
Place the sandwich in a hot skillet and grill each side for 2 to 4
minutes, or until the bread is golden brown—just long enough to grill
the bread, but not melt the cheese. Cut in half diagonally and serve.

BANANA PINEAPPLE PUDDING CAKE 
1 yellow cake mix with pudding
  1 can crushed pineapple
  1 pkg. vanilla pudding - instant
  4 or 5 lg. bananas
  1 tsp. lemon juice
  1 lg. carton Cool Whip 
Bake cake in oblong pan. About 10 minutes before cake is finished, put
pineapple and 1 cup sugar in saucepan. Bring to a boil. Then simmer 5
minutes. Pour over hot cake. Let cool. Slice bananas in bowl. Put lemon
juice on the bananas and cover with water. Let set until cake is cool.
Make the pudding and pour over cooled cake. Then take bananas out of
water and place on paper towel, and layer them on the pudding. Spread
Cool Whip on top.

Chili Dogs With Creamy Coleslaw


1 medium onion, chopped
1  lb lean ground beef
1 cup ketchup
1 teaspoon chili powder
2 teaspoon  prepared yellow mustard
Kosher salt and freshly ground black pepper
4  all-beef hot dogs
4 hot dog rolls
1/2 head of Savoy cabbage, washed and  shredded
1 red onion, sliced
1/4 cup sour cream
1/4 cup mayonnaise
1  lemon, juiced

Put a skillet over medium heat and drizzle in 2 tablespoons  of olive oil. 
When the oil gets hazy, add 1 medium onion (chopped) and cook,  stirring 
until soft and translucent, about 5 minutes.

Add 1 pound of  lean ground beef, breaking it up with the back of a spoon, 
and cook until  nicely browned, about 10 more minutes. Stir in 1 cup 
ketchup, 
1 teaspoon  chili powder, and 2 teaspoons prepared yellow mustard and 
simmer 
for 15  minutes until thickened. Season with salt and pepper.

Make the coleslaw.  Combine 1/2 head of Savoy cabbage (washed and 
shredded), 
1/2 red onion  (sliced), 1/2 cup mayo, juice of 1 lemon, some extra virgin 
olive oil and  toss together. Season with salt and pepper and toss again. 
Cover and set  aside in the refrigerator until you're ready to .
Heat the grill to medium  heat. Add a couple of garlic cloves to a pot of 
water and heat to a simmer.  Dunk hot dogs in the water for about 5 
minutes, 
until they are plump and  juicy. Take them out of the water, pat dry, and 
throw them on the grill --  just long enough to leave a nice grill mark.

Brush the insides of hot dog  rolls with olive oil and lay them face down 
on 
the grill, and cook until  toasty.

To serve, put a dog in each roll and top with chili and a big  scoop of 
creamy coleslaw.

Crescent Tuna Bake

8 crescent dinner rolls
1/2 cup chopped  onions
1 cup grated cheese
1 can tuna
1 can cream of mushroom soup
1  cup milk 

Mix tuna, onion, grated cheese and 1/2 can mushroom soup.  Unroll crescent 
rolls. Split apart. Place tuna mix on wide part of roll, about 2  or 3 
spoonfuls. Roll up as you would with crescent roll. Place in baking pan.  Mix 
milk with remaining soup. Pour over rolls. Bake at 345°F for 45 to 60  minutes 
until brown and bubbly.

Lucky The Dog

Anyone who has pets will really like this. You'll like it even if you don't and 
you may even decide you need one!

Mary and her husband Jim had a dog named Lucky.

Lucky was a real character. Whenever Mary and Jim had company come for a 
weekend visit they would warn their friends to not leave their luggage open 
because Lucky would help himself to whatever struck his fancy. Inevitably, 
someone would forget and something would come up missing.

Mary or Jim would go to Lucky's toy box in the basement and there the treasure 
would be, amid all of Lucky's other favorite toys Lucky always stashed his 
finds in his toy box and he was very particular that his toys stay in the box.

It happened that Mary found out she had breast cancer. Something told her she 
was going to die of this diseasein fact; she was just sure it was fatal.

She scheduled the double mastectomy, fear riding her shoulders. The night 
before she was to go to the hospital she cuddled with Lucky. A thought struck 
her...what would happen to Lucky? Although the three year old dog liked Jim, he 
was Mary's dog through and through. If I die, Lucky will be abandoned, Mary 
thought. He won't understand that I didn't want to leave him! The thought made 
her sadder than thinking of her own death.

The double mastectomy was harder on Mary than her doctors had anticipated and 
Mary was hospitalized for over two weeks. Jim took Lucky for his evening walk 
faithfully, but the little dog just drooped, whining and miserable.

Finally the day came for Mary to leave the hospital. When she arrived home, 
Mary was so exhausted she couldn't even make it up the steps to her bedroom. 
Jim made his wife comfortable on the couch and left her to nap.

Lucky stood watching Mary but he didn't come to her when she called. It made 
Mary sad but sleep soon overcame her and she dozed.

When Mary woke for a second she couldn't understand what was wrong. She 
couldn't move her head and her body felt heavy and hot. But panic soon gave way 
to laughter when Mary realized the problem. She was covered, literally 
blanketed, with every treasure Lucky owned!? While she had slept, the sorrowing 
dog had made trip after trip to the basement bringing his beloved mistress all 
his favorite things in life.

He had covered her with his love.

Mary forgot about dying. Instead she and Lucky began living again, walking 
further and further together every day. It's been 12 years now and Mary is 
still cancer-free.

Lucky, he still steals treasures and stashes them in his toy box but Mary 
remains his greatest treasure.

Remember... live every day to the fullest. Each minute is a blessing from God. 
And never forget... the people who make a difference in our lives are not the 
ones with the most Credentials, the most money, or the most awards. They are 
the ones that care for us. If you see someone without a smile today give them 
one of yours! Live simply. Love seriously. Care deeply. Speak kindly. Leave the 
rest to God

1 round steak, cut into serving-size pieces 
1 tsp. oregano 
1/4 tsp. red pepper flakes 
1/4 tsp. pepper 
1 (15 oz. can) tomato sauce 
1 onion, sliced 

Flour meat, blend remaining ingredients, except onion. Put meat in crock pot, 
top with sliced onion, 
pour on sauce. Cover, cook on low 6-8 hours.

Italian Pot roast
 
1 boneless beef round roast
1 medium onion, sliced
1/4 t. salt
1/4 t. pepper
2 cans no salt added tomato sauce, 8 oz. each
1 pkg Italian salad dressing mix, 0.7 oz
 
Slice roast in half for even cooking. Place in a 2 1/2 quart slow
cooker. Add onion and remaining ingredients. cover and cook on high
setting 5 hours or until roast is tender. or, cover and cook on high
setting 1 hour; reduce to low setting and cook 7 hours. Slice meat to
serve. Makes 8 servings

Loaded Baked Potato Salad
  
5 pounds small unpeeled red potatoes, cubed
1 teaspoon salt
1/2 teaspoon pepper
8 hard-cooked eggs, chopped
1 pound sliced bacon, cooked and crumbled
2 cups (8 ounces) shredded cheddar cheese
1 sweet onion, chopped
3 dill pickles, chopped
1-1/2 cups (12 ounces) sour cream
1 cup mayonnaise
2 to 3 teaspoons prepared mustard
 
Place the potatoes in a greased 15-in. x 10-in. x 1-in. baking pan;
sprinkle with
salt and pepper. Bake, uncovered, at 425° for 40-45 minutes or until
tender.
Cool in pan on a wire rack. In a large bowl, combine the potatoes, eggs,
bacon,
cheese, onion and pickles. In a small bowl, combine the sour cream,
mayonnaise
and mustard; pour over the potato mixture and toss to coat. 
 
Yield: 20 servings

6  medium potatoes, sliced, pared, and cut lengthwise
 1  cup water
 1  tablespoon white vinegar
Place potatoes in a 2 quart baking dish. Add water and sprinkle vinegar on
top of potatoes. Cover with plastic wrap. Cook on HIGH 8 minutes. Turn
potatoes over and cook on HIGH 8 minutes more. Mash, or serve whole
with melted butter or parsley. Sprinkle with salt and pepper.
Serves 6

A fine is a tax for doing wrong. A tax is a fine for doing all right.

1 oz. vodka
1 oz. chocolate sundae syrup
1/2 oz. raspberry flavored liqueur
2 oz. lemon lime flavored carbonated beverage
 
Fill a martini shaker halfway with ice. Add vodka, chocolate syrup, and
raspberry liqueur. Shake mixture vigorously for 5 to 10 seconds. Add
lemon lime flavored beverage; stir gently to combine. Strain contents of
shaker into a chilled martini glass. Serves 1

1 oz. cognac
1 t. sugar
2 oz. hot fresh espresso or strong coffee
1/2 cup prepared hot chocolate
4 oz. milk or light cream
Grated chocolate for garnish
 
In small pan, stir together cognac, sugar, espresso and hot chocolate.
Heat gently over low flame. do not allow to boil. Froth milk until
doubled in volume. Pour espresso mixture into two tempered cognac
glasses or latte mugs. Dollop frothed milk over espresso. Sprinkle
grated chocolate on top.

Fajita Seasoning 
Make your own fajita seasoning mix. 
INGREDIENTS: 
* 6 crushed chicken bouillon cube 
* 2 Tbsp. cornstarch 
* 2 Tbsp. chili powder 
* 1 Tbsp. salt 
* 1 Tbsp. paprika 
* 1 Tbsp. sugar 
* 1-1/2 tsp. onion powder 
* 1 tsp. garlic powder 
* 1/2 tsp cayenne pepper 
* 1/4 tsp. crushed red pepper flakes 
* 1 tsp. cumin 
Directions: 
Combine all of the ingredients in a small bowl. Pour into small glass or
plastic container, seal tightly and store in a cool, dry place. Makes
the equivalent of 3 packets of commercial or purchased Seasoning Mix. 
Or a shortier version of seasoning Mix 
* 4 tbsp chili powder 
* 2 tbsp grnd cumin 
* 2 tsp grnd oregano 
* 2 tsp garlic salt

Chili Rellenos Recipe 
* 12 poblano chilies 
* 1/3 cup canola oil 
* 2 pounds thinly sliced flank steak (Try delli thin) 
* 1 cup chopped yellow or green onion 
* 1 garlic clove, chopped 
* 2 cups fresh-diced tomatoes 
* 1-teaspoon salt 
* 1/2-teaspoon cumin 
* 1 teaspoon ground black pepper 
Chili Rellenos Recipe Batter: 
* 8 eggs, separated 
* 2 cups flour 
* 3 cups cooking oil 
Chili Rellenos Recipe Directions: 
Roast the poblanos. Be sure to turn them often. They should be slightly
charred when done. Place in a heavy plastic bag and set aside to steam
for 10 to 20 minutes. 
Peel the skin. Carefully make a lengthwise slit in each of the peppers
and remove the seeds. Rinse and drain well. In a large skillet, heat oil
and add meat. 
Brown. Add chopped onion, and garlic stirring for one minute. Add
tomatoes, salt, cumin and black pepper andcook for 10 to 15 minutes.
Stir constantly until meat stuffing is dry. Set aside to cool. 
Stuff the peppers with the filling and secure with a toothpick. In a
bowl, beat egg whites until stiff and foamy. Add egg yolks to egg whites
and blend. 
In a separate bowl add flour for dusting peppers and set aside. In a
deep skillet, heat the oil. Batter and flour dust peppers and drop into
hot oil. Fry to a golden brown on both sides. Soak up excess grease with
paper towels.

1 1/2 lbs. round steak, cut into serving size pieces
1 lb. baby carrots
1 envelope dry onion soup mix
1 can tomato sauce
1/2 cup water
 
Place carrots in bottom of greased 3 1/2 to 5 quart slow cooker. Top
with steak. Combine soup mix, tomato sauce and water. Pour over other
ingredients. Cover and cook on low heat 8 to 10 hours. To serve the
steak, ladle over plain or garlic mashed potatoes. Makes 4 to 6
servings.

Radiatore and Cheese
 
12 oz. dried radiatore or corkscrew macaroni
1 1/2 cups shredded sharp cheddar cheese, 6 oz
1 1/2 cups chopped fresh tomatoes
2 green onions, chopped
1 T. snipped fresh oregano or 1/2 t. dried oregano, crushed
1 clove garlic, minced
1 cup milk
2 T. flour
1/2 t. salt
 
Cook radiatore or corkscrew macaroni according to pkg. directs. Drain
well. Return pasta to warm pan. Gently stir in the cheese, tomatoes,
green onion, oregano, and garlic. Pour milk into a jar that has a lid.
Add flour and salt. Cover and shake well to combine. Stir the milk
mixture into the radiatore mixture. Cook, stirring gently over medium
heat until the cheese has melted and the mixture is thick and bubbly,
about 3 to 4 minutes. Makes 5 to 6 main dish servings

Chocolate Cherry Parfaits
 
1 pkg. fat free white chocolate instant pudding mix, 3.4 oz
2 cups fat free milk
1 can light cherry pie filling, 20 oz
3/4 cup chocolate wafer cookie crumbs, about 16 cookies
1/4 cup plus 2 T. frozen reduced calorie whipped topping, thawed
Fresh cherries, optional
 
Prepare pudding mix as pkg. directs, using fat free milk. Divide half of
white chocolate pudding evenly among 6 parfait or stemmed glasses. Spoon
half of pie filling evenly over pudding in glasses. Top parfaits evenly
with half of cookie crumbs. Repeat layers with remaining pudding, pie

Easy Baked Pasta Trader Joe's Style
 
You will need:
1 bag penne pasta
2 jars Trader Joe's Rustico sauce
1 bag shredded mozzarella cheese
1 container of Trader Joe's sundried tomato antipasto salad
1 pkg. Trader Joe's spicy Italian sausage
 
Layer ingredients in an 8 x 8 inch pan:
Cooked penne, sauce, cheese, antipasto salad, sausage, sauce and then
more cheese on top. Bake in oven uncovered at 400 for about 45 to 50
minutes. Enjoy.

Lemon Lime Angel Food Cake
 
1 pkg. angel food cake mix (16 oz)
1 cup water
1/3 cup fresh lemon juice
2 t. grated lime rind
Lime slices, optional
Frozen fat free whipped topping, thawed, optional
 
Preheat oven to 350. Prepare cake mix according to pkg. directions,
using 1 cup water and 1/3 cup fresh lemon juice. Stir in lime rind. Stir
in lime rind. Spoon batter into an ungreased 10 inch tube pan, spreading
evenly. Break air pockets by cutting through batter with knife. Bake at
350 on lowest oven rack for 40 minutes or until cake springs back when
lightly touched. Invert pan on a heatproof glass bottle; Cool cake
upside down in pan. Loosen cake from sides of pan using a narrow metal
spatula or knife, and remove form pan. Invert cake onto a plate. If
desired, garnish servings with lime slices and whipped topping. Makes 10
servings.

4 bananas 
1/4 cup flour1/4 cup brown sugar 
1 cup rolled oats or granola (granola is better) 
1/2 tsp. Cinnamon 
1/8 tsp. Salt 
4 TB butter, softened 

Pre-heat oven to 400 degrees. Slice bananas and evenly distribute among 4
ramekins or casserole dish, lightly sprayed with Pam. 
Place all dry ingredients in a medium mixing bowl; add the butter and work the 
mixture with your hands until it is crumbly. Sprinkle the mixture over the 
bananas, crumbling further with your fingers, enough to cover. Bake until the 
crumble gets firm and golden in color, about 10-12 minutes; serve warm.
 
A single candle can illuminate an entire room. A true friend lights up

 Anyone who has pets will really like this. You'll like it even if you 
 don't and you may even decide you need one!
 Mary and her husband Jim had a dog named Lucky.
 Lucky was a real character. Whenever Mary and Jim had company come for 
 a weekend visit they would warn their friends to not leave their 
 luggage open because Lucky would help himself to whatever struck his 
 fancy. Inevitably, someone would forget and something would come up missing.
 Mary or Jim would go to Lucky's toy box in the basement and there the 
 treasure would be, amid all of Lucky's other favorite toys Lucky always 
 stashed his finds in his toy box and he was very particular that his 
 toys stay in the box.
 It happened that Mary found out she had breast cancer. Something told 
 her she was going to die of this diseasein fact; she was just sure 
 it was fatal.
 She scheduled the double mastectomy, fear riding her shoulders. The 
 night before she was to go to the hospital she cuddled with Lucky. A 
 thought struck her...what would happen to Lucky? Although the three 
 year old dog liked Jim, he was Mary's dog through and through. If I 
 die, Lucky will be abandoned, Mary thought. He won't understand that I 
 didn't want to leave him! The thought made her sadder than thinking of 
 her own death.
 The double mastectomy was harder on Mary than her doctors had 
 anticipated and Mary was hospitalized for over two weeks. Jim took 
 Lucky for his evening walk faithfully, but the little dog just drooped, 
 whining and miserable.
 Finally the day came for Mary to leave the hospital. When she arrived 
 home, Mary was so exhausted she couldn't even make it up the steps to 
 her bedroom. Jim made his wife comfortable on the couch and left her to nap.
 Lucky stood watching Mary but he didn't come to her when she called. It 
 made Mary sad but sleep soon overcame her and she dozed.
 When Mary woke for a second she couldn't understand what was wrong. She 
 couldn't move her head and her body felt heavy and hot. But panic soon 
 gave way to laughter when Mary realized the problem. She was covered, 
 literally blanketed, with every treasure Lucky owned!? While she had 
 slept, the sorrowing dog had made trip after trip to the basement 
 bringing his beloved mistress all his favorite things in life.
 He had covered her with his love.
 Mary forgot about dying. Instead she and Lucky began living again, 
 walking further and further together every day. It's been 12 years now 
 and Mary is still cancer-free.
 Lucky, he still steals treasures and stashes them in his toy box but 
 Mary remains his greatest treasure.
 Remember... live every day to the fullest. Each minute is a blessing 
 from God. And never forget... the people who make a difference in our 
 lives are not the ones with the most Credentials, the most money, or 
 the most awards. They are the ones that care for us. If you see someone 
 without a smile today give them one of yours! Live simply. Love 
 seriously. Care deeply. Speak kindly. Leave the rest to God

Cheese, chiles and olives enhance this old-time favorite: tamale pie
casserole. Filled with frozen beef taco filling and shredded cheddar
cheese this dish is a great supper special when served with a crisp
green Caesar salad.
Jiffy Tamale Pie Casserole
2 1/2 cups water 
1 1/4 cups ALBERS Yellow Corn Meal 
1 cup whole-kernel corn 
2 (19.5-ounce) packages ORTEGAREG; Frozen Beef Taco Filling 
1/2 cup shredded cheddar cheese 
1 (4-ounce) can ORTEGAREG; Diced Green Chiles (optional) 
1 (4.25-ounce) can sliced ripe olives 
Preheat oven to 425°F (220°C). Grease a 13 x 9-inch baking dish. 
Cook water and corn meal in medium saucepan, stirring frequently, until
thick. Stir in corn; spread mixture onto bottom of prepared baking dish. 
Place frozen taco filling on top of corn meal mixture, cheese side up;
sprinkle with cheese, chiles and olives. 
Bake for 25 to 30 minutes or until cheese is melted. 
Makes 6 servings.

Beef and Bean Burritos
1 pound lean ground beef 
1 onion, chopped 
4 large garlic cloves, minced 
3 tablespoons ground cumin 
3 (15-ounce) cans black beans or pinto beans, rinsed, drained 
1 3/4 cups beef broth 
1 (4-ounce can) diced green chilies 
4 green onions, sliced 
Warm flour tortillas 
Grated cheddar or Monterey Jack cheese 
Chopped fresh cilantro 
Purchased salsa 
Heat heavy large skillet over medium-high heat. Add beef and cook until
brown, breaking up beef with fork, about 6 minutes. Add onion and
garlic; cook until onion is softened, stirring frequently, about 5
minutes. Stir in cumin and cook 1 minute. Add beans, broth and chilies;
cook until beans are creamy and thickened, crushing the beans with back
of spoon, about 15 minutes.Mix in green onions. 
Transfer mixture to serving dish. Serve with tortillas, cheese, cilantro
and salsa, allowing each person to assemble their own burritos at the
table. 
Serves 6.

Beef and Potato Empanades
These tasty meat pies are definitely worth the extra effort!
Beef and Potato Empanadas
Filling: 
1 small russet potato, unpeeled 
2 tablespoons olive oil 
1 pound lean ground beef 
2 medium onions, chopped 
1 large green bell pepper, chopped 
1/2 cup pimiento-stuffed green olives, chopped 
4 MAGGI Beef Flavor Bouillon Cubes, crushed 
1 tablespoon chili powder 
1 teaspoon ground cumin 
  
Pastry:
4 1/2 cups all-purpose flour 
1 tablespoon baking powder 
1 teaspoon salt 
1 cup vegetable shortening, melted 
1 cup warm milk 
1 large egg, beaten 
1 large egg yolk, beaten 
Vegetable oil for deep frying 
Spicy Cilantro Dipping Sauce (recipe follows) 
FOR FILLING: Cover potato with water in medium saucepan; bring to a
boil. Boil for 5 minutes. Grate potato (should have 1 1/2 cups); set
aside. 
Heat oil in large skillet over medium-high heat. Add beef, onions and
bell pepper; cook, stirring occasionally, for 8 minutes or until beef is
no longer pink. Add potato, olives, bouillon, chili powder and cumin;
cook for 3 minutes. Let cool. 
FOR PASTRY: Combine flour, baking powder and salt in large bowl. Add
shortening, milk, egg and egg yolk. Stir with a fork until dough forms a
ball. Roll into twenty 1 1/2-inch balls. Roll each ball on floured
surface to 6-inch circle. Keep dough balls covered as you work. 
Heat oil in large saucepan for frying. 
TO ASSEMBLE: Place 1/4 cup filling in center of each circle. Wet edges
with water and fold in half; seal edges by pinching together or crimping
with fork. Fry a few empanadas at a time until golden brown or place on
baking sheets and bake in preheated 400° F oven for 12 to 15 minutes
or until golden brown. Serve warm with Spicy Cilantro Dipping Sauce. 
Makes 20 empanadas.
FOR SPICY CILANTRO DIPPING SAUCE: Combine 1 cup finely chopped fresh
cilantro, 1/4 cup fresh lime juice, 1/4 cup MAGGI Seasoning Sauce, 1 to
2 tablespoons packed brown sugar and 2 teaspoons hot pepper sauce in
medium bowl.

Cooking Time: 40 mins

Beef and Salsa Stuffed Potatoes
4 large baking potatoes 
1 pound lean ground beef 
1/2 cup onion, chopped 
1 cup tomato-based salsa 
Salt and pepper to taste
1 cup shredded cheddar cheese 
2 green onions, finely sliced (tops included) 
Sour cream for accompaniment (optional) 
Scrub potatoes and dry well. Bake for 45 minutes to 1 hour at 425*F
(220*C) until tender, or microwave on HIGH 8 to 10 minutes or until
tender, rotating 1/4 turn after 4 minutes. Let stand 5 minutes. 
Meanwhile, cook ground beef and onion together until meat is done; drain
if necessary. Stir in salsa and continue cooking for 3 to 4 minutes.
Season to taste with salt and pepper. 
Cut potatoes in half lengthwise; fluff up pulp with fork. Place potato
halves on a baking sheet. Season with salt and pepper to taste 
Spoon an equal amount of beef mixture onto each potato half. Top with
equal amounts of cheese and green onion. 
Return to oven for 5 to 10 minutes or until cheese has melted. 
Serve garnished with dollop of sour cream, if desired. 
Makes 4 servings.

Crust:
1 3/4 to 2 cups all-purpose flour 
1 package active dry yeast 
1 tablespoon sugar 
2 teaspoons finely chopped onion 
3/4 teaspoons salt 
2/3 cup very warm water
2 tablespoons oil 
1/2 cups crushed tortilla chips 
Filling: 
1 pound ground beef 
1/2 cup chopped onion 
2 tablespoons chili powder 
1/2 teaspoon ground cumin 
1/4 teaspoon garlic powder 
3/4 cup water 
Suggested Toppings: 
1 to 2 cups shredded cheddar cheese 
2 cups shredded lettuce 
2 to 3 ripe tomatoes, chopped 
Chopped onion 
Chopped avocado 
Chopped fresh cilantro 
Sour Cream 
Fresh or bottled salsa 
Lime wedges 
In medium mixing bowl, combine 1 cup flour, yeast, sugar, onion, and
salt; mix well. Add warm water and oil. Mix by hand until almost smooth.
Stir in chips and enough flour to make a stiff batter. Spread in
well-greased 10-inch pie pan, forming a rim around edge. Cover; let rise
in warm place 20 minutes. 
In large skillet, brown ground beef with onion. Add seasonings and

Beef Tamale Squares
1 (8.5-ounce) package corn muffin mix 
1 1/2 cups water 
2 large eggs 
1 tablespoon chili powder 
1/2 pound ground beef, cooked and drained 
1 (16-ounce) jar ORTEGA Salsa - Homestyle Recipe (Mild) 
2 cups shredded cheddar cheese, divided use
1 cup frozen corn, thawed
1 cup shredded iceberg lettuce 
Preheat oven to 450°F (230°C). Lightly grease 12 x 8-inch baking
dish. 
Combine muffin mix, water, eggs and chili powder in medium bowl; add
beef, salsa, 1 cup cheese and corn. Place into prepared baking dish. 
Bake for 20 minutes; top with remaining cheese. Bake for an additional 5
minutes or until knife inserted near center comes out clean. Let stand
for 10 minutes before serving. Serve over lettuce. 
Makes 8 servings.

Beefy Green Chile and Cheese Bake
2 cups crushed tortilla chips 
2 tablespoons water 
1 large egg, slightly beaten 
1 pound ground beef, cooked and drained 
1 envelope dry onion soup mix 
1 (4-ounce) can ORTEGAREG; Diced Green Chiles 
1/2 cup shredded cheddar cheese, divided use
1/2 cup shredded Monterey Jack cheese, divided use
1 1/2 cups ORTEGA Salsa - Homestyle Recipe (Medium) 
1/2 cup diced green bell pepper 
Preheat oven to 350°F (175°C). Grease 9-inch square baking dish. 
Combine chips, water and egg in small bowl. Press into prepared baking
dish; bake for 10 minutes. 
Combine beef, soup mix, chiles, 1/4 cup cheddar cheese and 1/4 cup
Monterey Jack cheese in medium bowl. Spread over tortilla crust. Top
with salsa, bell pepper, remaining cheddar cheese and remaining Monterey
Jack cheese. 
Bake for 25 to 30 minutes or until cheese is melted. 
Makes 4 servings.

Beefy Mexican Lasagna
1 1/2 pounds ground beef sirloin (95% lean) 
9 corn tortillas 
2 (10-ounce) cans mild enchilada sauce 
1 (15-ounce) can black beans, rinsed, drained 
1 1/2 cups frozen corn 
1 teaspoon ground cumin 
1 1/2 cups shredded Mexican cheese blend 
Crunchy Tortilla Strips (optional)
1/2 cup chopped tomato 
2 tablespoons chopped fresh cilantro 
Heat oven to 350°F (175°C). Brown ground beef in large nonstick
skillet over medium heat 8 to 10 minutes or until beef is not pink,
breaking up into crumbles. Pour off drippings. Stir in 1 can enchilada
sauce, black beans, corn and cumin; bring to a boil. Reduce heat; simmer
5 minutes, stirring occasionally. 
Spray 11-3/4 x 7-1/2 inch baking dish with nonstick cooking spray.
Arrange 3 tortillas in dish, cutting 1 as needed to cover bottom. Spread
1/4 cup remaining enchilada sauce over tortillas; cover with 1/3 beef
mixture, then 1/3 cheese. Repeat layers twice, omitting final cheese
layer. Pour remaining enchilada sauce over top. 
Cover with aluminum foil. Bake in 350°F oven 30 minutes. Remove foil;
sprinkle with remaining 1/2 cup cheese. 
Bake, uncovered, 5 minutes or until cheese is melted. Top with tortilla
strips, if desired, tomato and cilantro. 
Makes 6 to 8 servings.
