FWIW our usual recipe is:

 300g  granary bread flour
 200g  strong white flour
 340ml water
 2tbsp olive oil
 knob of butter
 1tsp salt
 1/2 tbsp sugar
 1 sachet (8g) dried yeast

 This is our "everyday" bread, but we make a variety of different types
including the delicious "Waldkorn", but we have to go to Belgium to get
the flour for that !
