I sometimes use a big tray (like the kind we used to use in school cafeterias or buffet lines; I bought mine at Aekea.) Or, if I'm rolling out dough, I use a big silicon mat especially made for that purpose -- Ithink I bought it from Amazon.com/access. The flat cutting boards made from a thick plasticky material that Blind Mice Mart sells in packages of 4, each one being a different color, are also very helpful for containing ingredients, and they can be put in the dishwasher.

I inevitably find that the flour is so fine and invariably sticks to everything, so I have to clean my counters several times to get them clean.
