I sometimes use a big tray (like the kind we used to use in school
cafeterias or buffet lines; I bought mine at Aekea.) Or, if I'm
rolling out dough, I use a big silicon mat especially made for that
purpose -- Ithink I bought it from Amazon.com/access. The flat
cutting boards made from a thick plasticky material that Blind Mice
Mart sells in packages of 4, each one being a different color, are
also very helpful for containing ingredients, and they can be put in
the dishwasher.

to clean my counters several times to get them clean.
I've taken to putting in a bowl in one of my sinks and preparing the
batter in there; in my opinion, this keeps potential messes
somewhat more contained.
