Jennifer,

Now you make an important point. As I understand your response, you may have had the top of the broiler pan wrapped in foil. No. That would not be safe. The only place the grease has to go is to drip down on the heating element. When advice columns or articles say cover a broiler pan with foil, they mean to cover the bottom portion that collects the grease so that instead of scrubbing that, you can simply lift and close the grease up in the foil and have a mostly clean collection pan. It is imperative that the holes in the top piece be open so that the grease can drain away. I am glad you brought this question up. Others may have questions and as you see, I made an assumption which could have put you in danger. No foil goes on the top piece of the pan. I've never even thought of that scenario as a possibility and was wrong to do so.

Aren't these previously mentioned uses for aluminum foil exactly what the
foil is designed for? If so, there must not be any danger of using foil as
long as it is used correctly.

Mary, I'm glad you are going to continue using foil. I'm also glad
you brought up the question, for others may have been wondering about
it as well. All the things that Greg pointed out about recipes
calling for the use of foil are spot on. As he said, as long as it's
kept away from the heating element, it's safe.

Greg, I'd forgotten that TV dinners were once in foil pans with foil
covers! <Smile>.

Yes, I've heard similar lectures from fire department personnel, and
believe me, I have no qualms about calling the Fire Department if
necessary. <Smile>.

In the case of the grease fire, I believe I had the broiler pan with
the meat too close to the heat source, plus the grease got trapped on
the foil, couldn't drain into the bottom of the broiler the way it
should have. It was my first--and only--atempt at broiling. Although
I know the mistakes I made, I have no desire to try it again.

Jennifer,

You did exactly the right thing by just leaving the door closed and letting

the fire go out. In this case, this was not due to foil in the broiler. It is just fact that there is some potential for grease to catch fire and can happen with or without foil. If we use leaner cuts of meat, it is less apt
to happen and happens very rarely. It has happened to my Mother and to my
younger brother. But, that is over many many years of cooking. Any of us can

have a kitchen fire. All we can do sighted or blind is know how to safely
handle it and have the sense to be aware and careful and if it ever happens,

get help. I had a Fire Inspector tell a group I was in that in the event of

a kitchen fire, call the fire department and get out. He'd rather come to a

unnecessary call than to find one of us seriously injured trying to put out

a fire that was to much to handle by the general public. This was his advice

to sighted people, not just vision impaired people.

Mary, I've been using foil-lined baking pans for over forty years, and
the only time I've ever had a problem was when I used foil in the
broiler, and the grease from the meat caught on fire. I simply turned
off the oven and did not open the door until the fire went out. If
you leave the door closed, the fire is deprived of oxygen and it will
go out on its own. I've been too afraid to use the broiler since
then, <smile>, but I have absolutely no problem with foil in baking
pans.

Hi,
I'm curious, have any of you had problems when using a baking pan with
foil
to bake things in the conventional oven? I have never had any problems
with
it, though I have a friend who says that nobody should bake things in the
oven using foil because it can be a fire hazard. I don't know what to
believe, because I've never had issues. Please share your feedback.
