Everyone has their own technique. I use the Foil wrap method, but it works with 
a cooking bag as well. I wash the turky well and pull the skin away from the 
meat. Work from the ends of the turkey for best results. I make a spice rub 
containing things like poultry seasoning, sea salt, black pepper, a little 
extra sage, rosemary, thyme, basil, and parsley. I place the turkey on a large 
sheet of heavy duty aluminum foil. I rub the spices all over the inside cavity 
and under the skin, front and back. I place one whole stick of butter under the 
skin, about 3 quarters on the breast and legs and about one quarter on the back 
area, again under the skin is important. I then cut up a green apple, an onion, 
about 4 garlic cloves, a couple stalks of celery, a bellpepper, and a couple 
carrots into quarters. I then place these in the cavity of the turkey and wrap 
the whole thing up tightly in the foil. (My family loves the skin of the 
turky.) Make sure there are no slits in yur foil. You can use extra sheets and 
overlap them if you need to. No need to baste. I bake this BREAST DOWN (that is 
important too) at 300 degrees for about 20 minutes per pound. I use the leg 
test where you wiggle the leg to see if it's done by wiggling the leg and 
seeing if meat falls away from the bone, but the thermometer is more accurate 
for people who have never done a turkey. Make sure you check the thick part of 
the breast and that it reads an internal temperature of 180 degrees Fahrenheit. 
If using a cooking bag, have someone read those instructions and record them if 
necessary. Follow them exactly, although you can bake it at 300 degrees even if 
it recommends a higher temperature. The slower you cook a turkey, the more 
tender. I make a separt pan of cornbread dressing. You can use the veggies from 
inside the turky if you'd like.
